Lazy Stuffed Meatloaf

lg egg

tomato juice 1c

fine dry breadcrumbs 1/2c

fine chopped onion 1/2c

prepared horseradish 1t

celery salt 1/2t

salt 1/2t

pepper 1/4t

box of chicken stuffing mix, prepared according to directions

lean gr. beef 1 lb

ketchup 3T

mustard 1T

Combine first 8 ingredients in large bowl.

Add prepared stuffing. Stir. Add ground beef. Mix well. Press into greased 2 quart (2L) casserole.

Combine ketchup & mustard in small cup. Spread on top of beef mixture. Bake, uncovered in 350 oven for about 1 hour until fully cooked, and internal temperature of beef reaches 160F.

Very good, and easy. We like a bit more flavor so I will add some more spices, but it was delicious as is.
