Lemon Blender Squares
Base:
2c flour
1/2 c icing sugar
1 c butter or margarine
Mix base well. Press into 9" pan & bake at 350F for 20 minutes.
Filling:
4 eggs 1/2 t baking powder
1.5 c sugar 1/2 c lemon juice
1/4 c flour
Mix all filling ingredients in blender. Pour over baked crust. Bake for 25 minutes (until top is slightly browned)
Sprinkle lightly with icing sugar. Let cool, then cut into squares.

I tried this one out the other day and didn't mind it. As is the crust is a bit thick but I tried to thin it out and discovered that is bad....it was then a mess to get onto my plate lol. The flavor is good, not too lemomy. Hubby wants more lemon.
