Coq Au Vin

Coq au Vin
Prep 25 min cook/slow cooker 3 hour 30 minutes serves 8
4 slices turkey bacon, diced
1 jumbo onion chopped
1 lb carrots cut into sticks
2 cups celery chopped (optional)
1 (4lb) chicken, split and skinned
½ tsp salt
¼ tsp pepper
1 cup dry white wine
¾ cup low- sodium chicken broth
1 ½ tsp herbes de Provence or dried thyme
¼ cup chopped fresh flat leaf parsley
1. Spray large non-stick skillet with no stick spray and set over medium heat. Add bacon and cook until lightly browned, 3 minutes. Add onion and cook until softened, 8 minutes. Transfer mixture to a 5-6 quart slow cooker. Stir in carrots.
2. Sprinkle chicken with salt and pepper. Spray skillet with non stick cooking spray and cook chicken over medium heat until browned, 5 minutes per side. Transfer chicken to slow cooker. Add wine to skillet, bring to a boil, scraping up browned bits. Pour wine into slow cooker. Stir in broth and herbes de Provence. Cover and cook until chicken is fork tender, 3-4 hours on high, 6-8 hours on low. Top with fresh parsley.
