Meatball Stew
1 1/2 c Chopped Onion
3 1/2 c Baby Carrots
2 lbs. Baby potatoes, larger ones cut in half
1 1/2 t Dried Dillweed
1/2 t Pepper
1 kg Box of Frozen Cooked Meatballs
1 can Cream of Mushroom soup Condensed
1 c Beef Broth
1/2 c Water
2 t Worcestershire sauce
1 1/2 c Frozen Peas
Directions:
Layer first 3 ingredients, in order given, in a 5 to 7 quart slow cooker.
Sprinkle with dill and pepper. Arrange meatballs over top.
Combine next 4 ingredients in medium bowl. Pour over meatballs. Cook, covered, on low for 8 to 10 hours or on high for 4 to 5 hours.
Add peas. Sir. Cook, covered, on high for about 5 minutes until heated through. Serves 8.

Grilled flank Steak with Parmesan Crisps
Grilled flank Steak with Parmesan Crisps
Steak and Salad
1 lb beef flank steak
1/2 cup balsamic vinagrette dressing or italian dressing
1/4 tsp cracked black pepper
1 lb fresh asparagus spears trimmed
1/4 tsp salt
1/8 tsp pepper
6 cups torn romaine lettuce
1/2 cup thinly sliced radishes
additional 1/4 cup dressing
Parmesan Crisps
6 Tbsp parmesan cheese
In a lage non metal bowl marinate steak and dressing for at least 2 hours or overnight. Heat oven to 350. Spray a cookie sheet with cooking spray. To make parmesan crisps, spoon heaping tablespoons parmesan cheese in 12 mounds on cookie sheet. Bake 6-8 minutes until light brown. Carefully remove to a cooling rack. Sprinkle steak with cracked pepper and grill until desired doneness. Let stand 5 minutes. Toss asparagus with remainig marinade and grill in a grill basket or tin foil bowl until tender. Season with salt and pepper. Toss lettuce, radishes and the additional dressing. Divide all among 4 dinner plates and serve with parmesan crisps.

1/2 tsp oregeno
1/2 tsp salt
5 ham slices
Mix beef and spices with egg and crackers. Pat into 12x8 rectangle on wax paper. Cover with ham and 3/4 cup of the cheese. Roll jelly roll style. Seal ends and bake at 350 til done. Add cheese to top. Let stand 10 minutes before slicing.

Chili Cheese Turnovers
Chili Cheese Turnovers
2 tubes pizza crust (pilsbury)
2 cups shredded mexican cheese
1 15oz. can chili without beans
1 16oz. can ranch or mild chili beans
dip;
1 can diced tomatoes with green chillies drained
1 cup sour cream
Press pizza dough into 12 inch squares. Cut each into 4 6x6 squares. In a large bowl combine the ingredients and scoop 1/2 cup onto the center of each square. Fold over into a triangle and seal edges.
Bake at 425 on a greased cookie sheet for 13-18 minutes until golden brown. Cool for 5 minutes.
* This variation would be perfect for a lunch dish or for school lunches. It came from Taste of Home Busy Family Recipes.
* I altered the first ingredients for a supper to be;
2 tubes pizza crust
2 cupped shredded cheese (your choice)
1 15 oz. can chili style beans
1 small can tomatoe sauce
2 lbs ground beef
Follow the same directions as above. This version is very filling and goes well with a salad on the side.

Leftover Surprise Quesedillas
Leftover Surprise Quesedillas
Leftover chicken, steak, sausage or turkey, pork
Mushrooms
Onions
Kraft Italian or Original Herb dressing
Flour Tortillas
Shredded cheese of choice
Throw the meat and veggies in a frying pan, pour dressing over top and cook until veggies are done. Spray a pan with oil and put a small amount of cheese on a tortilla in the pan. Top with some of the meat, more cheese and another tortilla. Fry. If you are not using a quesedilla maker be sure to press down on the quesedilla so the cheese sticks the sides together.
Serve with salad or veggies and dip on the side.
This is my concoction and it makes leftover night in our house a blast. Don't worry if your leftover meat has a sauce on it, it just adds to the flavor and is even better.

2 onion’s sliced 1 cup strong brewed coffee
5 garlic cloves minced ¼ cup soy sauce
1 beef roast around 4 pounds
Place ½ the sliced onions in bottom of slow cooker top with garlic then add roast top with onions, mix coffee & soy sauce & pour over. Cover & cook on low for 9-10 hours. When done remove roast & onions. Mix ¼ cup corn starch in 6 tbsp cold water add to slow cooker for gravy till thick. (This came from TOH book)

fine dry breadcrumbs 1/2c
fine chopped onion 1/2c
prepared horseradish 1t
celery salt 1/2t
salt 1/2t
pepper 1/4t
box of chicken stuffing mix, prepared according to directions
lean gr. beef 1 lb
ketchup 3T
mustard 1T
Combine first 8 ingredients in large bowl.
Add prepared stuffing. Stir. Add ground beef. Mix well. Press into greased 2 quart (2L) casserole.
Combine ketchup & mustard in small cup. Spread on top of beef mixture. Bake, uncovered in 350 oven for about 1 hour until fully cooked, and internal temperature of beef reaches 160F.
Serves 6.

Swiss Steak
2 lbs round steak (3/4-1" thick)
1/4 cup flour
pinch of salt
pinch of pepper
3 Tbsp olive oil
1 cup chopped celery
1 cup chopped onion
2 cups sliced mushrooms
2 cups canned tomatoes
1 garlic clove minced
1 Tbsp HP sauce
With a kitchen mallet tenderize the steak. Cut into serving sized pieces. Dredge the steak in flour, salt and pepper. Fry until brown in the olive oil.
Place in a 2L casserole dish or a roasting pan. Add rest of ingredients. Cover and bake at 350 for 1 1/2 hours until meat is tender.
Feeds 6.
**I made this in my crockpot and cooked on low for 6 hours. Meat melted in your mouth. Comes from My Goose Is Cooked cook book.

1 bag hashbrowns, thawed
2 egg
can of cheedar cheese coup
salt pepper
mix in a bowl and spread on a pizza pan or cookie sheet. place in oven (350) for about 20 minutes to get it cooked to firm.
Meanwhile...
1 lb hamburger
onion, chopped
Fry. Add 2 cans of mushroom soup and mix. Spread on top of your base. Cover in shredded mozza and bake in oven at 350 for about an hour. Enjoy
Note: This can be adapted to anything. Change the soups, the cheese, the size and/or add veggies that would go.

1 29 oz tomato sauce
1 ½ cups onion
½ cup celery
¼ cup green pepper
¼ cup chilli powder
1 ½ tsp garlic powder
1 tsp salt
½ tsp pepper, oregano, sugar
1/8 tsp cayenne
2 cups red beans ( I always use more)
1. Cook beef , add all ingredients to crock pot or large pot cook low for 2-4 hours. I usually cook all day on low.
Muffin tin meat loafs
2 pounds of hamburger 1 onion chopped
Garlic to taste 1 egg
About 15 crackers crushed sprinkle of seasoning salt
Parsley flakes 1 can of tomato soup
Mix all but soup together; add ½ can of soup press into muffin tins bake at 350 for 45 min, spread remaining soup onto & bake for 5 more mins. My kids LOVE these! The recipe came from my sister in law Deanne

2 tablespoons vegetable oil
sauce;
3 1/2 cups tomato juice
1 cup brown sugar
10 gingersnaps, finely crushed
1/4 cup white vinegar
1 tsp onion salt
1. In a bowl combine the eggs, onion, bread crumbs and salt. Crumble beef over mixture and mix well. Shape into 1 1/2" balls. In a large skillet, brown meatballs in batches of oil. Transfer to a greased 9x13 cake pan.
2. In a saucepan combine the sauce ingredients. Bring to a boil over medium heat, stir until cookie crumbs are dissolved. Pour over meatballs. Bake, uncovered at 350 for 40-45 minutes or until meat is no longer pink.
